The Don Pancho Farm coffee story:

This lot comes from a small 4.5 hectare farm of Carlos Alberto Portillo Flores near the village of El Cielito in Santa Barbara, Honduras.

Carlos is a third generation of coffee producers, his grandfather worked the lands & planting the first Bourbon coffee on his farm more than 40 years ago.

Over the years Carlos’s father bought parts of his farm and he continued working with coffee and improving the plantations. When Carlos turned 22, his father decided to give him part of his farm and this year, for the first time, he prepared his first own micro-lot of Bourbon and Parainema.

This washed Honduran is a beautiful coffee with incredible complexity. Competition quality at a very affordable price.

Roast Level: light-medium

Expect a full bodied, sweet, and clean coffee with a long finish. Drunk black - bright prosecco and passion fruit with a jammy finish. With milk - flavours of butterscotch, pecan and vanilla.

Our Brewing Suggestions

To maximise sweetness & complexity we recommend as a starting point use 19g of coffee for a 42g shot in around 28-29 seconds at 9 bar

For home use, the Kalita Wave provides the perfect balance of body and complexity. As a starting point use a ratio of 28g of ground coffee with 500ml of water at approximately 95degC. Wet the bed of coffee with approximately twice its weight in water, say 60g and use a t-spoon to stir lightly to make sure all the grounds are equally saturated. Add remaining water in 3 equal measures with all water added before 2:30 mins. Total brew time should be around 3:00 - 3:15 minutes.
