Flavour Profile: Jasmine, Tropical, Tangerine, Buttery
Heritage:
- Direct Trade Coffee
- From the Region of Antioquia, Colombia
- Grown in an altitude of 1,980 masl
- Chiroso varietal
- Anaerobic Washed Process
A beautiful Colombian varietal, the Chiroso is described as Antioquia's own pink bourbon.
Hidden in Antioquia, between the mountain range that separates Colombia’s Pacific and Andean regions, lies Finca La Secreta.
Known as Antioquia’s Pink Bourbon, Caturra Chiroso was originally cultivated for its resilience and high productivity in the region’s cool climate. Today, it is celebrated for its remarkably complex and floral cup profile, producing an exceptional brew.
This is our third year buying this varietal from La Secreta, and we were excited to finally secure a washed lot. While the coffee still carries the buttery mouthfeel and delicate florals we’ve come to expect, the moment hot water hits the grounds, you’re met with the bright zest aroma of freshly peeled tangerine.
In the cup, the anaerobic washed process brings an added layer of tropical complexity — think mango, passion fruit, and lychee all intertwined. A coffee well worth the three-year wait.
espresso
To maximise sweetness, we recommend, as a starting point, using 17.5g of coffee for a 42g shot in around 32-34 seconds.
filter
For home use, the V60 Switch provides the perfect balance of body and complexity. As a starting point use a recipe of 16g ground coffee with 250g of water at approximately 94degC. Wet the bed of coffee with 40g of water with the switch open, leaving it to bloom for 1min. Close the switch and add the remaining 210g of water leaving the coffee to steep until 2:00. Open the switch and allow the coffee to drain with an aimed finish brew time of 3:00-3:30.
Roast Level: light medium
We roast this beautiful coffee to a light-medium level so it is perfect for filter coffee and for espresso drinkers who enjoy bright, fruity shots. For espresso, we recommend it is rested for 2 weeks before use.
